Khachapuri – Georgian Cheese Bread

Khachapuri is a traditional Georgian boat-shaped bread filled with melted cheese, a golden egg yolk, and butter.

Ingredients
  

Dough:
  • 250 g all-purpose flour
  • 120 ml warm water
  • 1 tsp sugar
  • 1 tsp salt
  • 1 tsp active dry yeast
  • 1 tbsp olive oil or melted butter
Filling:
  • 200 g shredded mozzarella
  • 150 g crumbled feta or sulguni if available
  • 2 egg yolks
  • 2 tbsp butter

  • Baking sheet

Method
 

Prepare the Dough
  1. In a large bowl, mix warm water, sugar, and yeast. Let sit 10 minutes until foamy.
  2. Add flour, salt, and olive oil. Knead until smooth and elastic.
  3. Cover and let rise for about 1 hour in a warm spot.
Prepare the Filling
  1. Combine mozzarella and feta in a bowl. Grate the cheese finely for smooth melting.
  2. Shape the “Boat”
  3. Preheat oven to 220°C (425°F).
  4. Roll dough into an oval. Fold edges inward and pinch ends to form a boat shape.
  5. Place on a baking sheet and fill the center with cheese mixture.
Bake
  1. Bake 12–15 minutes until golden and bubbling.
  2. Remove, create a small well in the center, add egg yolk and butter, bake 2 more minutes to warm yolk.
Serve
  1. Tear the edges and dip into the melted cheese and egg mixture. Enjoy immediately!

Notes

-Cheese matters: Use mozzarella + feta or mozzarella + ricotta if sulguni isn’t available.
-Don’t overcook the egg yolk—it should remain slightly runny for a creamy texture.
-For extra soft dough, add 1–2 tablespoons of yogurt.
-Serve hot for best flavor and texture.
